Hi Aditya- Rishikesh is a small place, and while I don't remember everywhere I ate while I was there a few years ago, this place stands out in my mind. The coffeeshop/bakery overlooking the Ganges right by the mouth of the Laksman Jhula bridge is a great place for a morning cuppa, and Chotiwala downstream about 15 minutes in the community of Swarg Ashram consistently gets good reviews for their vegetarian Indian fare. As in any small place, if you follow your nose for good smells, and look for a crowd, you'll seldom go wrong. Good luck! =)
