Beecher’s wins multiple American Cheese Society awards each year and has been heralded by die-hard fans as well as The Martha Stewart Show as the “world’s best.” The dish gets its special oomph from Beecher’s Flagship cheese, which is aged 15 months to develop its signature nutty flavor. A dash of chipotle adds a hint of smokiness. No plans to venture east? Swing by Beecher’s flagship store in Seattle's iconic Pike Place Market -- or try the recipe at home.

Beecher's is a cheese lover's dream. Cheese is made from scratch at the store and can be seen from the window. Also, variations of favorite cheese dishes such as mac n' cheese and grilled cheese sandwiches are featured.

Beecher's is one of the larger cheese shops in the city. The good: you can watch the cheese actually get made. The bad: it's not as good as Murray's Cheese shop, which itself isn't as good as many of the smaller ones. This problem is compounded, as Beecher's (that apostrophe again...) seems to think it is just as good, and thus chooses to charge the same price. At the end of the day, I'd recommend just going elsewhere.

So, here we are walking down the street and see "Beecher's", and I'm thinking wait, aren't they from Seattle? Yes, they are and this is their second storefront. This store has an excellent cheese selection, and/or you can order a sandwich (melt), with or without their famous Macaroni and Cheese. Bonus points for having a Coffee Happy Hour, where coffee drinks are $1 off between 8 and 9 in the morning, and 2:30 and 3:30 in the afternoon. There's also a sit-down restaurant (The Cellar) downstairs in the evening.
