LOVED their crab & cheese sandwich. Picture this - Fresh crab from Pike Place Market just right across the street and the freshest cheese (which you can watch them make at the store) melted in between crispy, buttered panini pressed artisanal bread (also freshly baked). Can you get any better than that?
I also got to sample their mac & cheese. They have an original called The World's Best Mac & Cheese which is pretty close to being true. I say that bc I prefer my mac & cheese to be texturally more interesting - a slight crisp to it would have been nice, but everything else about it was perfect!

Totally forgot I had been here until a friend posted a picture on facebook and then I remembered, oh did I remember. THE BEST mac 'n cheese! I went back twice and I was only in Seattle for 3 days.

Beechers has the best mac and cheese, also try their sandwiches and take home a hunk of cheese goodness.
The Beechers cookbook is great. Now when I crave mac cheese I hit Costco which sells their flagship cheese and crack open their cookbook. It's an all day process but, worth it. Otherwise go to the Beechers shop!!
They also opened up a Beechers at the Sea Tac airport so get a bowl before leaving Seattle!Recommended for:

CHEESE! This place is excellent! You can watch them making the cheese in a window, many people stop here, it's a main attraction. Inside, they have a great grilled cheese, I got the crab but all of them are good. The Mac and cheese is something you have to try - creamy, cheesy, melty...all of it is so good, a must visit!

Beecher's was #1 on my list of places to eat at in Seattle. Partly because I love mac & cheese. They have some of the best mac & cheese around. I ordered the large size to share with my friend and I have to say that I have had better. However, I do like the seasonings they use. While we were there, we got to watch them make cheese. It's fascinating seeing them make the curds. You can buy the flagship cheese here, squeaky curds, mac & cheese, tomato soup, grilled cheese sandwiches, and much more. I think the grilled cheese is the way to go because the mac & cheese was way to mushy for my taste. I prefer a much more al dente noodle. But that's me. I'm sure most people go gaga over their mac & cheese. It's still a cool place to visit with a lot of history.Recommended for:

I was at Pike Place Market and spotted this place (I'd never heard of it before). My boyfriend and I absolutely love cheese so we sampled the Flagship Cheddar. We both thought it was absolutely amazing and decided we needed to get some sort of sandwich with that cheese right away. We both got the flagship sandwich which is a grilled cheese with that amazing cheddar, jack, basil, and tomato. While we waited for our sandwiches we watched cheese being made, which is not something I've seen before. The sandwich ended up being the best grilled cheese of my life. It was sort of expensive (over $6 with tax) but well worth it. Definitely a must for cheese lovers!
Update: My second visit involved trying their mac and cheese, and it is also really delicious!

Beecher's Handmade cheese is a cute little cheese shop by the Public Market. They serve a plethora of cheeses - something for everyone! They have samples and if you want to try something different, you can always ask. I love watching their GIANT cheese churning machine - so much cheese!

Beechers Cheese is unique and located in the heart of Pike Place Seattle. I had one of their grilled cheese sandwiches and it was fantastic! You can also buy cheese as well -- there are too many varieties to list.

There are not many places where you can see tubs of cheese being made, but this is one of them. They are well known for their mac n cheese, which is very tasty. I would also highly recommend the crab sandwich (it is $10, but worth it) and the breadstick that gets warmed in a panini press.

Yum. If you are lucky you can see them making the curds in the window. Try the mac and cheese or pick some of their yummy hard cheeses and grab some bread or crackers and add it to your picnic.!

Tasty handmade cheese, but the ultimate indulgence here is their dungeness crab and cheese sandwich, it's like a grilled cheese sandwich but turned up to 11. Their Mac and cheese is excellent as well.

When you go to the Pike Place Market, venture right across the street where you'll see all those beautiful red chili peppers hanging around... One or two shops over you'll see... Beechers Handmade Cheese!!! You can have some there or even watch them make the cheeses! This is some really good cheese.

I came here for lunch last week - had the mac & cheese which was pretty good and also grabbed myself a container of cheese curds which were delicious. I'm coming back when I have more time to peruse their cheese selections.

I think the fourth star is really the cool factor that you can watch them make cheese while being invigorated by the stench (and I do mean stench) of cheese. delicious :) However, I wouldn't recommend this place for more than just the cheese because a look at their menu says everything is overpriced (but I guess you pay for good cheese so that part is ok).
There are so many great places in Pike Place Market that you could go to, all you need is some cheese from here and a great sandwich elsewhere and you're good to go!
To further promote this mission to "change the way America eats," Beechers launched the Flagship Foundation and the Pure Food Kids Workshop aimed at elementary school kids to teach them about healthy food. Their second location is in New York City.
