    The Blue Elephant cooking school is an absolute gem.

    Be sure to take one of the morning classes that includes a trip to the market. There is no better way to learn about Thai ingredients (and sample them) than to walk through the market on a guide tour with your chef / instructor. You'll learn how to pick ingredients, have the opportunity to ask questions, and will even get to interact with some of the stall owners.

    Once you've done your shopping, you'll return to the school to learn how to make 4 or 5 Thai classics (check with the school in advance to pick a class with the dishes that you wan't to learn to prepare). Often times, the instructor will throw in one extra.

    Ingredients are prepared in advance so you'll get to focus on the fun of cooking. The facilities are very modern and the instructors are very friendly. A great place to demystify the complexities of Thai cuisine.

    At the end of class, you'll have the opportunity to eat whatever you have made for lunch or dinner. I'm always shocked at how good things turn out. Food is served at a communal table with other attendees. The atmosphere is usually pretty social / friendly. A good place to meet other travelers.

    The school is flexible and willing to accommodate any special dietary requirements. If you are a vegetarian just let them know.

    For a girl who can barely wield a knife and is scared of spice, this place is great. From the market visit to the hands on attention, you put together a full 4 course meal of deliciousness.
