If you want decidely local, Charlie the Butcher is a classic Buffalonean eatery. Be sure to order the classic 'beef on weck'--freshly carved roast beef on a salted kaiser bun with au jus on the side. The main restaurant is located near the airport but there are a couple smaller chains in and near downtown too.

Charlie the Butcher's Kitchen makes its roast beef sandwiches in an open kitchen. You order on one side of this kitchen (enter through the right door), then sit at the bar on the other side or in the dining room.
The sandwiches are great. The classic is the Beef on Welk, but there are other meat sandwiches on the menu.
This location is right next to the airport.
