If you do one special meal in New Orleans, it should be at Cochon--it's Cajun food stripped bare, then rebuilt with the best possible ingredients. The style of the place is very spare and modern, but this food is more like what Cajun food would've been way back in the day, before they invented cream-of-mushroom soup and all the other strange shortcuts that get used now. Eating here will give you a better understanding of food all across New Orleans.

Cochon Butcher is good. However, it was so over-hyped for me that it wasn't as good as I expected. I was disappointed that they just used plain white bread for their pork belly sandwich - if I'm paying $10 for a sandwich, I expect all the ingredients to be of a certain quality. Their special sandwich of the day with cured lamb ended up being better than their highly acclaimed pork belly sandwich, but ended up being way too salty to finish.
I'm sad that it wasn't as good as I hoped it to be, but it won't stop me from going back to give it another chance.

Cajun cooking for the gourmand. Traditional Southern fare inventively prepared using locally sourced ingredients. Try the friend alligator with chili garlic aioli! Awesome location in a refurbished warehouse. Most entries $15-25, for a more casual dining experience check out Cochon's Butcher next door.

The crowd is young and ready to eat some interesting new orleans type cuisine. They have a very different liquor menu ranging from tito's to bourbon tasting menus and even moonshine tasters. Everything was great. I have never had a bad meal here. Also, they always have something different they you will not see on other menus. Good location also, in the warehouse district. I was able to walk to bars following the meal.

The sandwiches here are out of this world. Which ones? ALL. In particular I am in love with the muffaletta, which is enormous and more than enough to share with another person. I tried my first boudin here and was impressed. Another dish I am in love with here is the potato salad. I would like to fly buckets of this back to Los Angeles. If you're a voyeur you can sit in the front and stare at all of the glorious beautiful hunks of meat in the cases.

One of my favorite things to do is have the cab swing by here on the way to my flight home from NOLA and grab a pressed cuban for the plane. It holds up for the first 1-2 hours and is such an amazing inflight treat while your neighbor snacks on a bag of peanuts.
Pro tip: have them leave out the pickle or it might make the bread soggy.
