Before partaking in the most amazing St. Honore Cake you'll ever taste in the Bay Area, I recommend saying a short prayer to St. Honore, the patron saint of bakers, that goes like this:
"St. Honore, pray for me as I am about to inhale this incredibly decadent cake made up of delectable pâte a choux puffs filled with pastry cream and dipped in caramel. May it last more than a moment on the lips and never affect the hips, or any other body part whatsoever. St. Honore, friend of all with terrible sweet tooths, pray for me."
You can also insert any other dessert into that prayer before eating it. I think it's because I say this prayer, I'm not 300 pounds yet.
