This is a moving target so follow them on twitter to see where they're at. (@grlldcheesetruk) The Caprese Melt is incredible and you can never go wrong with the Fully Loaded (baby back ribs, mac & cheese) and their tater tots are really good too.

As probably the most popular food truck in LA right now, the Grilled Cheese Truck lines can be up to 2 hours long. However, you do need to try the truck at least once just so you can say you have. What’s so special about a grilled cheese sandwich? When they include BBQ and mac n cheese into it, you know it’s something special. I personally like the grilled cheese sandwich with the pepperjack cheese, chili, and Fritos. Though the sandwiches are not huge, you can get full off of one. If you still need some more, you can always add in a side of tater tots or mac n cheese or even try one of their smore sandwiches on brioche toast.

The Grilled Cheese Truck does just that, but at different locations that you discover through the website or on Twitter (@grlldcheesetruk). I tried the "plain and simple" gruyère on french and the brie on cranberry bread with apples, almonds, and thyme.
The idea of the truck is fantastic, and finding it makes it a bit of a thrill. However, the sandwiches can't stand alone with that context. They are a bit bland, and although you can build your own from artisan ingredients, the bread needs to be much better. This is California; where's the sourdough!?

Whew, the lines for this truck are long, and haven't gotten any shorter, surprisingly. But their grilled cheese hits the spot - mac and cheese and short ribs in one grilled cheese toasty package is something to seek out.
