Chepstow is like castle perfection for me, then. I wasn't the biggest Wales fan, but this was my favorite stop in the entire country. Commissioned by William the Conqueror in 1067, the castle has some serious historical cred. You can now walk around the exterior and admire the 1000-year-old architecture. Astounding.

I haven't been to Carmathen, but my favorite castle in Wales is about 1 1/2 hours away (and you could probably take a dog!). Have fun!
