I wasn't the biggest Wales fan, but this was my favorite stop in the entire country. Commissioned by William the Conqueror in 1067, the castle has some serious historical cred. I haven't been to Carmathen, but my favorite castle in Wales is about 1 1/2 hours away (and you could probably take a dog!). Have fun!
