We've been going to Hill Country for years, and it is consistently some of the best Texas style BBQ ever. The wet brisket is fat-laden goodness, and I crave their classic green bean casserole. Get your meal ticket, wait in line to get your food on a plastic tray while a server gets you a cold beer, and dig in! Not for the cholesterol and fat-wary.

AMAZING!! Definitely a new favorite of mine. I came for their karaoke with a live band, and it did NOT disappoint. We arrived at 8 for an 8:30 karaoke start and had no problem getting our names on the list. There are plenty of interesting (and friendly) karaoke regulars in the crowd, and the band itself was really fun and also friendly, cheering for everyone & coming around to get to know the patrons a bit. In fact, one of the band members offered us art lessons (a renaissance man, I guess!)!
The food itself was also ridiculous. I don't love the process - you basically wait in a line for your food & then bring it back to your table and pay on your way out - but the mac and cheese was SO GOOD. So was the cole slaw. One of my friends (a Texan) went crazy and bought almost every meat dish they had, and she was really happy with her food.
Needless to say, I'll definitely be back. Especially next time I get the urge to sing Journey in front of a packed house :-)

Get the fatty brisket. This is a great mess hall for locals, travelers, tourists and fans. The cafeteria style eating suits me fine and is great while on holiday or work trips for quick meal. Sometimes that have fun bands playing in the great space downstairs. Good for groups as well due to the open layout and self-service nature of ordering. Nice beers available and full bar downstairs.

Hill Country makes very good BBQ, but I never like it as much as I think I will-- something is missing from their BBQ sauce. In any case, i know lots of people who think this is the best southern BBQ in NY, so maybe I'm missing something.
