    For a cafe right in the heart of tourist town this place is surprisingly relaxed and relatively cheap. It's literally in the shadow of Hagia Sophia and across the road from the exit to the Basilica Cistern. The gozleme (filled flat breads) are very good and I can also vouch for the Turkish coffee.
