Pachamanca is a dish typical of the highlands in Peru, and it is very hard to get in the city because it involves burying the meat and vegetables in the ground for hours to cook under hot stones. But Ricardo, the owner of his namesake restaurant, has developed his own special oven and prepares this traditional dish to perfection with his own signature spice mix, right in the heart of the city in the San Miguel district. It's worth calling to make a reservation ahead of time, not because it gets especially crowded but rather because he only makes as many portions as he thinks he'll need in a day. You'll need to note if you want cuy (guinea pig) as these are only made by request.Recommended for:
