Okay, so there's plenty of information out there about noma and its chef Rene Redzepi...so grab the book, read on the internet, whatever...you can find all you want about the place there.
On the other hand, now that I've traveled and eaten around a bit, I can safely say that noma really is a unique place with a unique cuisine. It is a platypus even compared to other fine dining spots in Copenhagen (AOC, Geranium, Formel B, the Paul, etc)
If you have a moment, try to check out the rest of the building...it's a destination in and of itself. Also, if you go around the back of the restaurant, there are some hidden picnic tables with an incredible view of the canal and opera house. Great for lunchtime picnics while you watch the cooks frantically running from the upstairs kitchen to the downstairs one. Also in the area is a pretty different little shop (one building to the right if you're facing the restaurant entrance) featuring frozen products from greenland...and if you happen to come before noma's 2011 summer break, look for a grey houseboat parked right in the harbor...that's the nordic food lab http://www.nordicfoodlab.com/Recommended for
