A small 65-seat fine-dining restaurant in Vail village. I serve seasonal American cuisine and we rely heavily on the producers and farmers of Colorado. I tweak the menu all the time depending on what's available. We have a short season in the summer so we have to keep it all organic. Our signature dish is potatoes crusted trout! This time of the year it's served with caramelized brussels sprout leaves. Another dish is elk carpaccio, tabouli salad and mustard cream. Because the menu is constantly changing, new different challenges and flavors are constantly coming up. We serve bison, elk and Colorado lamb is really popular. It really depends on the season and the dish. The most popular dessert is sticky bun sundae, served with caramel and pecan sticky buns-- like you would eat for breakfast-- served warm with vanilla bean ice cream.
