If you've got limited time, focus on the South Rim, which has the most easily accessible sights, hotels, restaurants, transport, etc. I'd recommend not taking a helicopter tour - they're noisy, they pollute and ultimately they're not as wonderful of an experience as hiking the park's trails and taking photos from scenic viewpoints on the canyon rim.

I'm sure you'll be doing more than just a helicopter tour and the Rim Trail is just about the most accessible (and most beautiful) attraction in the park. In addition to the walkway along the Rim itself, there are several trails that descend from the Rim Trail down into the canyon. These offer adventures ranging from short day hikes to overnight outings, camping at the bottom of the canyon and back.

I highly recommend staying at one of the hotels within the national park, right along the south rim. Just the experience of sleeping alongside the rim of the Canyon is an exciting endeavor. Plus, you'll be close to everywhere you need to be - trails, guides, restaurants and more.
