I haven't eaten "real" food at Sinbala, just their shaved ice. There is a check list for all the toppings, making it easy to order your favorite fobby combination. I usually share with a friend or two and request both egg pudding and red bean.Recommended for:

I've been eating at this place for years, and I love that the food is always consistent and the prices don't seem to increase (that I know of). My staple choice is the pork chop rice, but the pork chop noodles are good, too. I like that the rice comes with veggies, corn, and tomato and egg. The pork chop is always cooked well, although it can leave me feeling incredibly thirsty after eating it. Sausage rice is tasty, too although I think it's quite expensive for the sausage when I can get pork chop instead! But there's something about the way the sausage is made that is reminiscent to the night markets at Taiwan, only the price is really jacked up here. Oyster omelette also tasty. I think the first time I ever tried it was at Simbala, and I'm a fan! Popcorn chicken also a good choice.
The cold noodles (which are already prepackaged) are good, the ingredients all really fresh. The shaved ice is gigantic and even with four people, we couldn't finish it. I like that you can pick and build your own shaved ice, but I think they count the condensed milk as one item, which is already -1 item if you're like me and need that condensed milk with your shaved ice. The only thing that I don't think Simbala excels at are their drinks. I've tried a few of their drink selections and I've always been underwhelmed.
Service is usually pretty good and the workers are extremely quick and efficient. Restaurant closes early (9:30) and they usually have last call before 9:30 I believe. Cash only and they are closed on Tuesdays!Recommended for:
I like that Sinbala offers some vegetarian options - such as the famous Taiwanese oyster/egg - (oh ah zen) i use to love eating this as a kid and since i became a veggie its hard to find anywhere that serve you a veggie option of this dish!
I always order this dish and have a side of vegetarian dumplings..the veggie dumplings are okay - not as delicious as Ding Tai fung ...but good enough!Recommended for:

Taiwanese cuisine! Love the concept of the Taiwanese sausages with different kinds of topping to enhance it and label them Fusion Taiwanese food!

The only thing that was a disappointment was the Oyster Pancake. Barely any oysters and it was just soggy.. yeah, soggy with the green veggie inside..

Solid Taiwanese food, good sausages and shaved ice. Be advised that the seating outside is first come first serve and when you put your name on the wait list it's actually for inside seating. Weird, I know.

Taiwanese food in LA is decent, but cannot quite compare to the actual thing in Taiwan. However, Sinbala is the closest to the true Taiwanese flavors that I can find. The sausages come with slices of garlic on top, which is traditional Taiwanese, the ba-wan (meat ball in a gelatinous wrap) has a good Taiwanese ketchip sauce, and the popcorn chicken with basil is good too (though American chicken lacks the tenderness of Taiwanese chicken). Although the wait might be long (try to get there when they open or after 1PM for lunch), the food comes out in just a few minutes after you order.
