    As strange as it seems to say it, the Omelette Shop -- a tiny stand just outside of the market square gates -- has become almost as much an institution in Jodhpur as its famous blue houses. Recommended by virtually everyone in the guidebook business (his sign touts an LP reco), the Omelette Man has spawned a host of imitators, but none compare to the humble magnificence of his masala cheese omelette sandwich -- dirt cheap and so tasty you'd probably better buy two on your way up to the Fort. A visit to his stall is practically de rigeur for visitors to the city, and after a taste, you'll find it hard to argue.
