Of all the Japanese restaurants in Honolulu and Waikiki, there is no doubt that this artisanal kitchen inside an art gallery is at the top of its game. I'd stake my seven years of travel and living in Japan on it. Be amazed by the modern reinterpretation of kaiseki (seasonal multi-course tasting menu) cuisine by this Kyoto-born chef, who infuses Hawaii island-grown ingredients into his daily changing menu. You've got to make reservations and don't expect to be able to substitute anything. Just eat whatever the genial chef puts in front of you, and be oh so grateful. Sake and dessert cost extra, but the main 7-course tasting menu is under $60. Don't speak Japanese? Don't worry. Some of the staff speak English, and last time I dropped by the sous chef from Orange County was on hand to translate for confused mainlanders.
